CITRUS GLUT
At this time of year, I always find there is excess citrus around, I’ve had several people offer me lots of lemons, oranges and limes. I thought I’d give you a few ideas to try with your citrus haul.
- Marmalade
- Lemon Butter (use the same recipe below to make a lime or blood orange curd as well.
- Preserved Lemons
- Dried lemons and Oranges for garnish on cakes and drinks. These also make great Christmas tree decorations.
- Lemonade or lemon cordial
Easy Lemon butter recipe
Ingredients
- 200 g sugar
- finely grated zest from 2 lemons
- 118.29 ml lemon juice
- 2 egg yolks (reserve the whites for another use or discard)
- 3 large eggs
- 113.4 g salted butter
Method
- Combine fresh lemon juice with sugar, eggs and egg yolks.
- Stir until everything's smooth and a sunshiny yellow.
- Add the butter.
- Microwave in 45-second increments, whisking in between. It will take 4-6 45-second microwave stints/stirs till the mixture turns to a thickened, glossy curd.
