Canteen

I hope you are staying well and keeping positive. I'm really missing seeing all of my friends and their happy faces at the canteen window. I can't wait until we are all back together again.

 

This week I have been baking and dropping some yummy surprises to my friends to let them know that I'm thinking about them. 

 

So, today I thought I would share another of my favourite recipes - Lemon Cake. Have a go at making it  and let me know how it turns out. Maybe you could drop one to a friend over the holidays to brighten their day.

 

Lemon Buttermilk Loaf

85g butter

1/2 tblsp finely grated lemon rind

180g caster sugar

2 eggs

100g self-raising flour

50g plain flour

80ml buttermilk (or use milk with a teaspoon of lemon juice added)

 

Preheat oven to 180* C(160* C fan-forced)

Grease a 20cm x 11cm small loaf pan and line with baking paper

 

Beat the butter , sugar and rind until light and fluffy. 

Beat in the eggs one at a time.

Beat in the sifted flours and buttermilk in two batches. 

Pour mixture into pan.

 

Bake for about 45min or until cooked when tested. Stand loaf in pan for 5 mins before turning out to cool. Drizzle with icing made from icing sugar and lemon juice.
