Quick quinoa stir-fry

 

Get dinner on the table in 20 minutes tonight with this quick quinoa stir-fry recipe.

 

16 Ingredients

 

260g pkt  Quick Cook Quinoa

1 tbs vegetable oil

4 spring onions, thinly sliced

2 garlic cloves, crushed

2 tbs gluten-free soy sauce

2 tsp sesame oil

1/2 cup (60g) frozen peas, thawed slightly

1 cup (80g) shredded cabbage 

1 carrot, peeled, grated

4 eggs, fried sunny side up

200g Perino tomatoes, halved

1 Lebanese cucumber, thinly sliced

Gluten-free soy sauce, extra, to serve

Spring onion curls, to serve

Dried chilli flakes, to serve (optional)

Lime wedges, to serve

Prepare the quinoa

 

Step 2

Meanwhile, heat the vegetable oil in a large deep frying pan over medium heat. Add the spring onion and garlic. Cook for 1-2 mins or until aromatic.

 

Step 3

Add quinoa, soy sauce and sesame oil to the pan. Stir-fry for 3 mins. Add the peas, cabbage and carrot. Stir-fry for 3 mins or until heated through.

 

Step 4

Divide the quinoa mixture among serving bowls. Top with the fried eggs, tomato and cucumber. Drizzle with the extra soy sauce and sprinkle with spring onion and chilli flakes, if using. Serve with lime wedges.
