Coconut Pancakes with Mango and Ice Cream
1 Egg, beaten
½ C coconut milk
2/3 c plain flour
2 tbsp shredded coconut
- Whisk egg and milk together
- Add flour and egg with coconut
- Allow to set for 5-10 min
- Place a small amount of mixture in frypan wait 2-3 minutes, flip and repeat process and then serve with Mango and Ice cream
Kangaroo Curry
READY IN: 40mins.
SERVES: 2 people.
300 g kangaroo fillets, cubed.
1 tablespoon butter
1 medium onion, diced.
1 teaspoon garlic, crushed.
2 teaspoons curry powder
1 cup coconut milk
1 piece orange sweet potato steamed.
1 handful of spinach
1 red chilli sliced.
2tbsp flour * for a thicker sauce
- Prepare vegetables, set aside.
- Melt butter in a saucepan over medium heat.
- sauté onion and garlic until onion is turning soft.
- Add curry powder and cubes of kangaroo meat and toss around for about a minute until it is lightly browned on the outside.
- Add coconut milk and bring back to a boil. Reduce temperature slightly, stirring occasionally for around 30 minutes until the curry has thickened and the kangaroo is cooked.
- For a thicker sauce add a couple of tablespoons of flour mixed with water to the curry
- Serve with steamed rice
Vegetable Spring Rolls
1tsp garlic
1 tsp ginger
½ tsp chilli
1 tsp curry paste*
1 piece wombok , sliced
1 carrot, peeled and grated
1/3 c bean shoots
1 spring onion, sliced

- Prepare ingredients
- In frypan saute:Onion, garlic, ginger, curry paste with vegetables until soft
- Place mixture in middle of wrapper- fold in sides and roll
- Dip fingertip into water and slide across end of wrapper and stick together
