Senior School

From the Head of Senior School

As I read through the students’ reports I am impressed by the attitude so many of our students bring to their schooling.  In interviews with new parents and students, I often tell them that our students are motivated to succeed – in whatever field it may be. They have a willingness, a seriousness of intent. Like so many aspects of a school’s culture, the prevailing attitude of the many establishes the dominant tone amongst all. It is this sort of positive peer reinforcement that must be protected and maintained. Culture can be quickly shifted, and, once again this semester, I have been grateful to the students in the Senior School for their good sense, co-operation and striving to keep their personal standards high.

It has been a long term, with a very disappointing end for many students. Everyone has earned a decent break, and I wish all our students and families a restful, peaceful and enjoyable holiday.

Hospitality

Our Year Ten Hospitality students have continued their learning journey about spice.  In the final weeks of term, they combined traditional Indian spices to make homemade tandoori paste for marinating chicken. Traditional Naan bread was partially prepared then stored.  The components were bought together to produce delicious tandoori chicken skewers served on warm, freshly cooked Naan, with mango chutney.

The process of caramelisation was used to create a French-style pear tarte tatin, using vanilla as the spice.  Pears provide a good source of vitamin C and dietary fibre however the addition of sugar, butter, and pastry increases the sugar and fat content.  This is considered a sweet treat, and only eaten sometimes and in small amounts.
