Damper, granola and knife skills

Year 4 have shown great enthusiasm in their second year of cooking classes. We began with a focaccia decorated with a range of produce freshly harvested from our gardens. Students were very creative, and thoroughly enjoyed their delicious baked bread.

Now familiar with the kitchen, in week two students had the opportunity to show respect and acknowledgement of the anniversary of the National Apology. We created sweet (Lemon Myrtle and Strawberry Gum) and savoury (Warrigal Green and Salt Bush) damper, which was wrapped individually in banana leaves to steam in the oven. These were devoured hot very quickly with butter and golden syrup.

This week we have started our knife licences. We have seen each class begin their knife skills by understanding the three types of cutting styles - bear, bridge or tunnel and rock and chop. Great skills Year 4, we witnessed you chop your fruit brilliantly and carefully, which you then added to your freshly made granola, served in a dessert cup with some Greek yogurt.

We look forward to providing more opportunities in the following weeks to practice those lifelong skills.
