Fabulous Fast Food with Ms Janson

Had to test these myself for quality control incase they were poisonous....🤣😋...they were not.....I hope some of them make them home to you....but I have my doubts...yummo! (ed)

Jam Cheesecake Cookies

Ingredients

  • 125g cream cheese 
  • 125g unsalted butter 
  • 3/4 cup caster sugar 
  • 2 tsp vanilla extract 
  • 1 2/3 cups plain flour
  • 1/2 cup raspberry jam 
  • 75g white chocolate, melted 
  • 2 tsp desiccated coconut 

Method 

  1. Preheat oven to 160C. and line 1 baking trays with baking paper. 
  2. Chop up cream cheese and butter into small pieces. 
  3. Use electric beaters to beat the cream cheese, butter, and sugar in a bowl until pale and creamy. 
  4. Beat in the vanilla extract. 
  5. Use a spatula to fold in the flour until just combined. 
  6. Batch 1: Roll level tablespoonfuls of mixture into balls. Place on prepared tray. Dip your thumb in flour and use to make a 2.5cm indent in each biscuit. Place a spoonful of each in each indent. 
  7. Bake the biscuits for 15 minutes or until light golden underneath (biscuits will still be pale on top). 
  8. Allow to cool, on trays, for 5 minutes before transferring to a wire rack to cool completely. 
  9. Start batch 2 and repeat. 
  10. Melt white chocolate in the microwave. 
  11. Drizzle cookies with melted chocolate and sprinkle with coconut.
