This Weeks Recipe...Lemon delicious slice

Equipment:  3 cm deep, 16 cm x 26 cm slice pan, sharp knife, chopping board with a mat placed underneath, metric measuring cups and spoons, grater, citrus juicer, sieve, baking paper, oven mitts, wooden spoon, stand mixer, microwave safe bowl



150 g unsalted butter                        ½ teaspoon vanilla extract

1/3 cup caster sugar                           1 tablespoon cornflour

1 1/3 cups plain flour                         spray oil                     

Lemon topping:

4 eggs                                                        1 teaspoon finely grated lemon rind

1/3 cup plain flour                               1 cup caster sugar

2/3 cup lemon juice

What to do:

  1. Preheat oven to 160˚C fan forced. Spray the slice tray and line it with baking paper, allowing a     2 cm overhang on all sides.
  2. Cut the butter into cubes and microwave on medium (50%) for 1 minute or until melted. Remove with oven mitts. Set aside to cool.
  3. Stir in vanilla and sugar. Sift flours over the butter mixture. Using a wooden spoon, stir until a soft dough forms. Transfer to the prepared pan. Press into the pan. Bake for 20 or so minutes, until golden. Remove from oven and set aside to cool.
  4. To make the topping add the eggs, lemon rind, flour and sugar to the stand mixer bowl and whisk until smooth. Add the lemon juice and whisk to combine. Pour over base. Bake for 15 minutes or until just set. Cool completely in pan. Dust with icing sugar, cut into pieces and serve.
