Hi Families

There's nothing better on a cold weekend than a pot of yummy Chicken Soup. This is my favourite recipe:

Quick and Easy Chicken Noodle Soup

INGREDIENTS

1 tablespoon olive oil

1 spring onion, sliced

1/2 roast chicken, skin removed

3 ltrs chicken stock

1 tsp herbs (thyme, oregano mix)

freshly ground pepper to taste

1 cup chopped onion

1 – 1/2 cups chopped celery 

2 cups grated carrot

1 cup grated zucchini

Half pack of egg noodles

INSTRUCTIONS

Drizzle olive oil into large pot and add chopped onion. Sauté until translucent.

Add carrot and zucchini and fry for a couple of minutes. Add stock and herbs and bring to a boil.

Reduce to a simmer, add chicken and allow to simmer.

Add egg noodles and allow to cook for about 10 minutes (follow noodle package instructions).

Garnish with spring onion and black pepper.
