This term, our Year 12 VET Hospitality students have begun undertaking the unit of ‘Serve food and beverage’ where they embark on a journey in learning all the types of food and beverage service, and demonstrating their skills to real customers.
The students will be involved in an industry-level food and beverage service every two weeks where they will be involved in menu planning, food preparation, teamworking, table setup and customer service. The theme around these service periods is ‘Cultural Celebrations’ where students will be challenged with preparing cultural recipes - a cultural occasion that falls under the same week will be honoured.
This week, they have undertaken their first service period which was a Canape service for staff members in honour of Children’s Day in Japan and South Korea. The students have spent a few lessons preparing their dishes at a commercial-scale of 70 servings. The menu consisted of Salmon Avocado Sushi Rolls and Korean Fried Chicken.
In two weeks time, they will be undertaking another food and beverage service for staff members in honour of the National Day in Nepal.
