Some recipes to try

Gingerbread

 

340gm butter softened

250gm brown sugar

5 g bicarb soda

4gm salt

5gm ginger

2gm mixed spice

2gm cinnamon

2 eggs

340gm golden syrup

750gm plain flour

 

 

In a mixing bowl add all ingredients except eggs and flour. Mix till smooth approx. 2 mins, add eggs, mix, add flour in batches and mix to you have a firm dough, (if needed add more flour) 

 

Wrap in glad wrap and rest for at least 1 hour in the fridge. 

 

Roll out to the desired shape, and bake at 170c for 10-15 mins.

 

 

 

White Christmas

 

 

Ingredients

 

3 cups Rice Bubbles 

3/4 cup desiccated coconut

1/4 cup shredded coconut

3/4 cup sifted icing sugar

1 cup powdered milk

1/2 cup sultanas

1/2 cup glace cherries

1/2 cup craisins

250gm copha

 

Combine dry ingredients in a large mixing bowl. Melt Copha in the microwave for 45 seconds – 60 seconds, cool slightly and pour over the dry ingredients. Mix until combined. Pour into a lined slice tin and press down evenly. 

Refrigerate until firm. Cut into squares and serve. 

Keep refrigerated.
