This week's menu took a trip to Wales! A different but yummy treat, we made Welsh cakes and served them with our own lemon curd. We talked about typical Welsh foods and identified where Wales is situated in the United Kingdom.
In this recipe we were able to modify it in several ways to cater for our students with allergies and intolerances. We were able to make gluten free, dairy free and even egg free!

In winter our lemon trees are all full, so there is no better time to make fresh lemon curd. The students all enjoyed trying it and it is actually very easy to make. If you still have lots of lemons on your backyard tree, I thoroughly recommend giving this recipe a try.
