This week our year 5 and 6 students began preparing and sharing their first menu for the year. With an abundance of zucchini still coming out of The Patch we created a delicious menu consisting of zucchini cannelloni stuffed with ricotta and leafy greens; a cucumber and tomato salad and, back by popular demand- pear and zucchini muffins.

These cute little cannelloni are completely gluten free, by simply using fresh ribbons of zucchini instead of pasta sheets and rolling a delicious ricotta cheese filling inside. We made our own tomato sauce and baked them with a sprinkling of golden cheddar. Most of our students love cucumbers which are also prolific at the moment. They enjoyed this summer favourite in a salad with a zesty but tasty dressing. This was a very full menu where the students were able to strive for accuracy and have everything ready on time and at the same time!

I am also very proud and excited to announce that Kingswood was chosen by the Stephanie Alexander Kitchen Garden foundation, together with their ambassadors from Coles, to host a photoshoot event showcasing our beautiful kitchen gardens and the work we do to help our students form positive food habits for life. Celebrity chef Curtis Stone and Stephanie Alexander herself will also be in attendance! Bianca and I both look forward to sharing the events of this special day with our Kingswood community.
