COVID Cookbook

Students and staff shared their favourite COVID recipes - we will put them all together and share them with our community.  Below are a couple of recipes we recieved:

APPLE TURNOVERS x 4 - Steph Moon

Ingredients

  • Apples x 2
  • Puff pastry x 2
  • Brown sugar x 2 tbsp 
  • 100mls Milk
  • 1tsp cinnamon
  • White sugar for sprinkling on top

Method

 

  1. Layout both puff pastry sheets out on bench and slice into two triangles 

        2. Slice apples into small grape size pieces and place into large bowl

        3. Add cinnamon and brown sugar into the large bowl

        4. Toss apples around in mixture to get them all coated

        5. Divide mixture into 4 and evenly place on one side of each piece of pastry

       6. Fold the excess pastry over the mixture to create the fill pocket, using a fork press                down on opening sides to create closed pocket

 

     7. Dip a brush in the milk and paint generously over the apple turnovers

     8. Sprinkle white sugar over the apple turnovers 

     9. Bake at 200 degrees for 25 mins or till golden brown

 

I like to enjoy this with scoops of ice cream

 

 

 

5 INGREDIENT CREAMY LEMON SLICE - Denvah Matthews

The best part about this Creamy Lemon Slice is that it's made from just 5 ingredients!

  • crushed biscuits – also called cookies in some parts of the world. You can use absolutely any brand of plain sweet biscuits/cookies you like. I generally use Arnott's Marie biscuits which are very popular in Australia.
  • melted butter - you can use either salted or unsalted butter for this recipe.
  • lemon juice - fresh or store-bought lemon juice can be used for this recipe.
  • sweetened condensed milk - I recommend using full cream sweetened condensed milk (not skim) as it sets firmer when baked and has a creamier texture.
  • eggs - use large eggs (approximately 55g each).

Method

STEP 1 – MAKE THE CRUST

Grease and line a slice tray with baking paper and set aside. Crush the biscuits until they are fine crumbs, then add the melted butter and mix to combine. Press the biscuit mixture firmly into the base of the tin. Bake and allow it to cool.

 

STEP 2 – MAKE THE FILLING

Beat the sweetened condensed milk, lemon juice and eggs until they're creamy. Pour the liquid onto the baked crust and bake until it's set. Allow your lemon slice to cool in the fridge for at least 4 hours.
