Recipe of the Week

Vegetable Pasties

So after a night of left over veggies and mash, I boil 2 grated carrots 2 grated parsnips and one diced brown onion, salt and pepper to taste. 

Once softened I then drain the veggies, but also save the juice from the pot as this makes a delicious veggie stock for arancini balls or risotto. 

I then add the mash potato and left-over veggies to the carrot and parsnip mixture, and a handful of mozzarella.

 

I then let the mixture cool and defrost 6 frozen puff pastry sheets. Once the mixture has slightly cooled, you wrap it in the puff pastry. You can do veggie rolls or veggie pasties, it doesn’t matter how you do it, they’ll still taste amazing. 

 

Cook in the oven on 180 fan forced until golden brown and crispy. Optional - add a little cheese on top pre cooking. 

 

Cook as many as you’d like, and freeze what you don’t like for up to 6 months .

 

Yummy! I am a veggie pasties enthusiast and being a vegetarian and I kid you not, they are very hard to find down here. So over winter I do a big batch and freeze, they are a real winner served with salad.    Enjoy!   Mel Semple

I See I Care...Removing Rubbish for Violet

Even preps can be little super-heroes and lead the way in how we can care for our dolphins.  Violet and the 5 dolphin calves are very happy having less rubbish in the water.

The momentum grows as more fabulous families join in picking up more pieces of rubbish to help keep our bay clean and dolphin calves healthy.

Estelle has created a gorgeous Ukrainian Folk Art inspired creature using wax crayons and sustainable paint. The paint was made by dissolving left over Colour Run event powder and water.   A clever use of the few teaspoons of powder left in each bottle. 

 

Very happy  and creative students enjoying creating their own Ukrainian Folk Art creatures using markers and recycled Colour Run powder turned into paint.
