Yeast Free Hot Cross Buns

Ingredients:

  • zest of one orange
  • 56g Demerara sugar
  • 140ml of orange juice
  • 170g mixed dried fruit
  • 1 egg, lightly beaten
  • 350g SR flour
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1tsp ginger
  • 56g of melted butter

 

Method:

  1. Preheat oven to 180°.
  2. Soak dried fruit and orange zest in a bowl for 2 hours or overnight.
  3. Melt the butter, add the egg and combine.
  4. Place the fruit mixture into a large mixing bowl then add the flour.
  5. Mix well. The mixture should be sticky and ‘clean’ the sides of the bowl.
  6. To make the buns, line a baking tray with baking paper. Form the buns by using a large spoon and placing the mix onto the tray.

To make the cross:

Mix-

  • 2 tablespoons of plain four 
  •  one tablespoon of water 
  •  ½ a teaspoon of sugar.

Make a cross for each bun

Glaze:-

Dissolve 2 tablespoons of sugar in a small saucepan with a tiny amount of 

water on the stove. Use a pastry brush to glaze each bun.

Place into the oven and bake for 20 minutes or until golden.
