Breakfast Club

We recently launched our very own St Bridget's Breakfast Club. We are very proud of this new initiative at our school and we are blown away by the positive response that we have received from the children. 

 

We had over half our school attend our first breakfast and it was such a joy to see the hall buzzing with excitement and enthusiasm. 

Please find below a recipe of the banana bread that we served on week one in case you may be interested in making it at home. It is really popular with the children and it is a regular menu item.

⅓ cup (75 grams) melted coconut oil or extra-virgin olive oil or high quality vegetable oil*
½ cup honey (168 grams) or maple syrup (155 grams)
2 eggs
1 cup (225 grams) mashed ripe bananas 
¼ cup (56 grams) milk of choice or water
1 teaspoon baking soda 
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon, plus more to swirl on top
1 ¾ cups flour
 
Preheat oven to 165 degrees Celsius and grease a 9×5-inch loaf pan.
In a large bowl, beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk. 
Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined. Some lumps are ok!
Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon. 
Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. 
Let the bread cool in the loaf pan for at least 10 minutes. You may need to run a butter knife around the edges to loosen the bread from the pan. Carefully transfer the loaf to a wire rack to cool before slicing.

A big Thank you to Sarah, Mum of Ben and James who owns Pure Bread Bakery in Surrey Hills. She regularly donates bread and fresh crumpets which the children love! We make cheese toasties with the bread which is a big hit!

To ensure we are able to continue to provide this great initiative each week at no cost to our families we have connected with other businesses and organisations and receive food donations. Each week we receive fruit, bread and long life milk from Boorandara Community Outreach and each month we receive 180 eggs from Josh's Rainbow Eggs. Also, we wrote to Kellogg's regarding our intiative and received a donation of 80 boxes of cereal.

{~THE BREAKFAST CLUB~}

The breakfast club is so much fun, I tried it and it was amazing! I can’t wait to go every Thursday morning. There was a wide variety of fruits and a couple of yoghurt choices. There was also Milo, banana bread and even so many different spreads to go on my toast. I didn't know some of my friends would even be there but everyone was so friendly and I even made new friends. I really love how it was set up so beautifully and there was a good breakfast vibe. Overall, this is a great idea and I just loved it. I’ve never been more excited to have breakfast.
