Our Year 11 Methods class are very good cooks. Here are some of their recipes for you to try!
Apple and Cinnamon Slice (Jared)
340 g buttercake cake mix
1 cup coconut
125 g butter
425 g canned apple
1 tbs lemon juice
1 egg
1 pinch caster sugar
300 g sour cream
1 pinch ground cinnamon
1 pinch brown sugar
Method
Mix cake mix and coconut together then add melted butter.
Press mixture into 2 medium biscuit pans.
Cook for 10-15 minutes at 180C. Allow to cool.
Open apples, spread over the base and squeeze a little lemon juice over.
Beat egg with pinch of caster sugar then add sour cream and beat lightly. Pour over apple and sprinkle with cinnamon and brown sugar.
Bake a further 30 minutes or until set.
Cinnamon Scrolls
Another very versatile recipe requiring very few ingredients (we know how hard it has been getting shopping done in quarantine!).
Mix equal parts yoghurt (any sort) and self-raising flour. This is your dough.*
Knead
Flatten into a rectangle
Spread with a mixture of cinnamon and softened butter.
You can get creative here, and substitute your favourite spread, or something savoury.
Method
Roll up the dough and cut into rounds
Cook at 180 degrees C
Hot out of the oven, glaze with a mixture of icing sugar and milk
Eat immediately. YUM!
*This two ingredient dough also makes a quick pizza dough - see VCAL Pizza recipe below!
Choc Chip Bickies
Beat together 180g of butter and 1/3 cup of sugar. Mix in 125ml condensed milk and 11/2 cups of SR flour. Stir through 250g of choc bits. Bake at 180 degrees.
Note: Cook as biscuits or in a slice tray.
You can replace the 250g of choc chips with dried fruit and/or nuts.

Basque Burnt Cheesecake Toast
Ingredients
1 large egg
100 gram of cream cheese
100 mL of thickened cream
40 gram of sugar (based on your preference)
A bit of lemon juice
4 slice of bread
Method
1. Flatten your bread, but just the inner part, leave the crust just as it is.
2.Make the butter:
Mix cream cheese with sugar
Add a bit of lemon juice, then mix
Add the thickened cream, then mix
Add the egg and mix1/2
3. Fill the flattened bread centre with the butter.
4.Sprinkle some sugar on top
5. Put it in the oven into fan forced mode for 190°C for 15 to 18 minutes.
VCAL Pizza
For a very easy pizza dough, mix equal parts yoghurt (any sort) and self-raising flour.
A nice alternative to tomato pasta sauce is Pesto. Here’s our recipe:
Grab yourself some....
Fresh Basil leaves (2 bunches)
Parmesan Cheese (1/2 Cup)
Olive Oil (1/2 Cup)
Pine nuts/Cashews (1/3 Cup)
- leave out for an equally delicious nut free option
Garlic (3 cloves) or to taste
Pepper and lime to taste
Method
Throw it all in a blender and you're good to go!
