After showcasing the amazing work of our Food Technology students in the previous newsletter, this time it is your turn to bake. This recipe is simple and delicious!
Ingredients
1 cup SR flour
1 cup dessicated coconut
1/2 cup sugar
125g melted butter
395 g can sweetened condensed milk
juice 2 lemons pulp 2 passionfruit
Method
Preheat oven to moderate, 180'C. Lightly grease a 20 x 30 cm slice pan and line with baking paper
In a large bowl, combine flour, coconut and sugar. Add butter, stirring until combined
Press mixture firmly into prepared tin. Bake for 12-15 minutes, until golden. Cool slightly.
Meanwhile, in a medium bowl, combine condensed milk, juice and passionfruit. Pour over base and bake for a further 12-15 minutes, until set.
Cool in the pan then chill until required. Serve cut into squares or store in an airtight container. This slice freezes well.
