In our garden.

Greetings from 1/2D! (Hannah Douglas)

Last week in our Gardening session, we were lucky enough to find some lovely green cabbages that were ready to be harvested!

Sara helped us use a very sharp (and big!) knife to cut them at the stem and tidy up the outside leaves of each cabbage. The chooks sure did enjoy those delicious leaves, along with some cheeky slugs that we found hidden in between the leaves.

We got to work in Investigations, reading the recipe, collecting the ingredients, chopping the cabbage, onions and parsley and mixing the ingredients to make a thick batter.

Miss Douglas helped with the electric frying pan and we knew when it was time to flip them as they went crunchy and brown around the edges.

We served them with a homemade sauce (tomato sauce, Worcestershire sauce and honey) and of course, Kewpie Mayo!

The final verdict from us was that they were DELICIOUS!

Below is the recipe we used. It was super easy and you can add any veggies that need to be used up in the fridge.

Okonomiyaki - Japanese Cabbage Pancakes

Ingredients

  • 2 Cups Cabbage - thinly chopped or diced
  • 4 Slices Cooked Bacon - thinly chopped
  • 2 Stalks Green Onion - thinly chopped
  • 2 Large Eggs - room temperature and whisked
  • 1 Cup A.P Flour
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1/4 Tsp Sugar
  • Pinch of Black Pepper Powder
  • 1/2 Cup Water

Instructions.

Prep Work:

  • In a large bowl, mix A.P flour, baking powder, salt and sugar.
  • Keep Aside.

How to Make Okonomiyaki - Japanese Cabbage Pancakes:

  1. In a large bowl, add chopped cabbage, cooked bacon, and green onions.
  2. Now add the A.P flour mix.
  3. Mix everything using a fork or chopstick.
  4. Add eggs, water and mix using a fork to make a thick even batter
  5. Heat a skillet with 1 Tbsp Oil.
  6. Now, Scoop 2ladles (1cup) of the okonomiyaki batter in the center of the skillet.
  7. Spread the batter in a circular motion to make a 1inch thick disc.
  8. Let this cook for 2 minutes on medium heat (keep an eye to prevent the batter from burning) and flip to the other side.
  9. Cook the other side, till both sides look evenly golden brown and batter is thoroughly cooked (it will crisp up the edges once cooked).
  10. Remove the cooked Okonomiyaki pancake (Japanese Cabbage Pancake) and use the steps above to create more pancakes.
