SPRING IS IN THE AIR AND ON THE PLATE

Blossoming flowers, warmer nights, longer days and symptoms of hayfever are sure signs of Spring. The season of new beginnings and a time of new life as nature's cycles reset. It's hard to not notice a change in energy levels and perhaps a little ‘spring’ in your step. 

 

A spring fling of new-season vegetables are at the top of the list. 

 

Artichokes, asparagus, beans galore, snow peas and cucumbers will add crunch and creativity to your dish. Cruciferous favourites including broccoli and cauliflower are versatile and make an appearance throughout spring. With the tail end of winter still around, consider adding some heat to your dish by using fresh chillies.

 

Berries are nutritious, colourful, flavorful and easy to prepare. Fresh berries are always the perfect addition to a spring dish. Perusing the produce section of your local supermarket, you are bound to come across several types of citrus fruits. The citrus family shines during the season of spring in Melbourne; lemons, limes and mandarins are in abundance.
