Cinnamon Teacake
Ingredients
60g butter, softened
2/3 cup (150g) caster sugar
1 teaspoon vanilla extract
1 egg
1 cup (150g) self-raising flour
1/3 cup (80ml) Milk
10g butter, melted
1 teaspoon ground cinnamon
1 tablespoon caster sugar
Method
- Preheat oven 180 C. Grease a deep 20cm round cake pan; line base with baking paper.
- Beat butter, sugar, extract and egg in a small bowl with an electric mixer until light and fluffy. Stir in sifted flour and milk until smooth. Spread mixture into pan.
- Bake cake about 30 minutes. Turn cake, top-side up, onto a wire rack. Brush top of hot cake with melted butter; sprinkle with combined cinnamon and extra sugar while hot.
Serving suggestion: Serve warm with butter
