The year 9 fast food classes have been whipping up wonderful Lentil burgers and enjoying learning all the health benefits these tasty delights are packed with.
In case you are keen to give them a go here is the recipe.
Plant based burgers
INGREDIENTS
- 1 cup cooked brown lentils
- ¼ white onion, diced
- 1 tab olive oil
- ½ a carrot, finely grated
- ¼ cup oat or regular flour
- 1 tab bread crumbs
- 1 clove of garlic, crushed
- 1 tbsp ketchup
- 1 teaspoon low-sodium soy sauce or coconut aminos
- ¼ tsp cumin
- ¼ tsp smoked paprika
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil,
- Bread roll per person
- Lettuce
- ½ tomato
- Sauce
- 1 tab Greek or plain yogurt
- ¼ clove garlic, crushed
- ½ teas lemon juice
- 1 tsp finely chopped parsley
- Pinch of salt
with optional Lemon Yogurt sauce
DIRECTIONS
- Chop onion finely then heat a large skillet with 1 teaspoon olive oil and sauté your diced onion until it softens, about 2-3 minutes.
- Transfer them to a bowl, add grated carrot, lentils, garlic and spices and mix well using a masher or your hands to break up some of the lentils.
- Add in the soy sauce, ketchup and oat flour and mix well together until evenly incorporated.
- Line a cutting board or flat plate with baking paper, and shape the batter into 2 burgers. The batter will be slightly sticky so I suggest shaping them with wet hands.
- Heat your skillet on medium/low heat, and add in another 3 teaspoons of olive oil. Cook the burgers for about 5-6 minutes per side, until golden brown. You may need to add more oil in between batches.
- Once they’re all cooked, mix together the yogurt ingredients in a small bowl.
- Serve on a bread roll with lettuce and tomato!
- The burgers will stay fresh in the fridge for up to 5 days or can be frozen for 3 months.
