Last week the students made a yummy Chick Pea Curry, see below for the recipe.

 

Chickpea Curry

Ingredients

  • 300 gr chickpeas
  • 50 gr diced tomatoes
  • 100 ml coconut milk
  • 1 tsp spice mix ( ginger, garam masala, cinnamon, coriander, cumin)
  • Crushed garlic
  • Splash of lemon juice
  • 1tbs vegetable oil

Method

  1. Heat the oil on medium heat
  2. Add the spices and let them bloom for a few minutes (to release the flavour and fragrance)
  3. Add the chickpeas, diced tomatoes heat for a few minutes
  4. Add the coconut milk and heat till fully heated
  5. Taste to see if you need any more spices.
  6. Serve with a ¼ pita bread.
