Our Seniors will be sharing a recipe with you, that they use in their cafe, so that you can recreate it at home!

Cinnamon Teacake

Ingredients

1 1/3 cups self-raising flour

1 teaspoon bicarbonate of soda

1 teaspoon of cinnamon

1/2 teaspoon nutmeg

2 cups grated carrot

1 cup chopped walnuts 

2/3 cup vegetable oil

1 cup sugar

1 teaspoon vanilla

3 eggs, lightly beaten

 

Lemon Frosting

50g cream cheese

2 tablesppons butter, softened

2 teaspoons lemon juice

1 teaspoon finely grated lemon rind

2 cups icing sugar mixture

 

 

Method

  1.  Sift flour, bicarb soda and spices into a bowl.
  2. Add carrots, walnuts, oil, sugar, vanilla and eggs and mix lightly.
  3. Place in a greased and papered 29 x 20cm lamington tin and bake in a moderate oven (180oC) for 35 to 45 minutes or until cooked when tested with a skewer. 
  4. Stand for a few minutes before turning out carefully to cool.
  5. To make the frosting: combine all ingredients and beat well until smooth and creamy.
  6. Ice with lemon frosting and serve cut into squares and, if desired, top with fresh passionfruit.
