Our Carrot Recipe

Ingredients

 

        1 1/3 Cups SR Flour

        1 teaspoon Bicarb Soda

        1 teaspoon Cinnamon

        1/2 teaspoon Nutmeg

         2 Cups grated Carrot.

         2/3 Cup Vegetable Oil

        1 Cup Sugar

        1 teaspoon Vanilla

        3 Eggs, lightly beaten.

 

Method

 

  1. Sift flour, bicarb soda and spices into a bowl.
  2. Add carrot, oil, sugar, vanilla and eggs and mix lightly.
  3. Place in a papered loaf tin and bake in a moderate oven (180c) for 35 to 40 minutes or until cooked when tested with a skewer.
  4. Stand for a few minutes before turning out carefully to cool. 
  5. Frost with cream cheese, lemon juice and icing sugar.
