In the Kitchen

We have been very busy in the kitchen over the last two weeks investigating the introduction of food from other countries into Australian cuisine.

In the 1950's Australian migration saw lots of families arrive from European countries devasted by WWII, and Italian and Greek immigrants arrived en masse to start their new lives in Australia. The Ferrone family, featured in the ABC series, Back in Time for Dinner, had family arrive in the '50s from Italy who brought with them their mediterranean cuisine. We learnt how to make homemade pasta, and how back then, olive oil was only available from the pharmacy and garlic from the greengrocer as there was no supermarkets.

Fresh pasta is fun delicious, and we teamed it with a tomato sauce, full of freshly harvested produce from our garden, silver beet, parsley, thyme and basil. Yum!

This week's menu focusses on a Greek flavour - pita bread, tzatziki dip, baked eggplant and feta and a Greek salad.

In The Garden

We have also been very busy the past two weeks getting lots of garden maintenance jobs done along with some new plantings. We finally planted the last three fruit trees in their spots despite the very windy day it was. The students did an amazing job digging the holes as the ground was very hard once we got down past the first few centimetres. We planted and staked them, hoping that they would still be standing the next day, and much to our relief they were! Weeding and pruning continued along with more mulching and Ms Della planted some new seedlings as well. Our mushroom kit as on the way and everyone is eagerly waiting to see what happens next. 

FINALLY...

Many thanks to Saputo Dairy products for their very generous donation of $500 worth of dairy products for use in our kitchen program. We have already used some of the butter in the delicious lemon butter that some of the dads might have sampled on their pancakes last Friday! We have plenty of cheese as well to last us many months of cooking!
