As we have just had Anzac Day, I thought it would be a good time to share my favourite recipe for Anzac Biscuits. Maybe you can bake them together...
It has been a lovely start to Term 2. We do not have any photos to share this time; we were having too much fun with art and crafts, making food for the mums in the play kitchen, playing cars, or building with Duplo...amongst other things. The adults seem to have enjoyed sharing stories about their term break with the kids. It is always wonderful to hear these conversations and just be part of the community. I hope you enjoy this week’s recipe. Who doesn't love an Anzac biscuit?
Anzac Biscuits
Ingredients
1 cup plain flour
1 cup desiccated coconut
3/4 cup rolled oats
1/2 cup raw sugar
125g butter or margarine
3 – 4 tbs golden syrup
1 tsp bi-carb soda (baking soda)
1 1/2 tbs boiling water
Instructions
- Preheat the oven to 150c.
- In a large mixing bowl, place flour, oats, sugar and coconut. Mix to combine.
- In a saucepan, melt butter and golden syrup over medium heat. Once melted remove from the heat.
- Blend the bi-carb soda and the boiling water. Stir until dissolved.
- Stir the bi-carb soda and water mix into the melted butter and golden syrup. It will froth up a bit.
- Add this to the dry ingredients and mix well.
- Roll tablespoons of mixture into balls and place on a greased or baking paper-lined baking tray, leaving room for biscuits to spread. Slightly flatten the balls to help the biscuits to spread when cooking.
- Bake in the oven for 15-20 minutes or until golden. Let biscuits cool on the tray for 5 minutes before transferring them to a cooling rack. Enjoy!
