Take a look at one of the favourites from the House Bake Sale!

The House Bake Sale was a huge success, raising a grand total of $3299.15! Congratulations Sherwood for raising the most money ($1105.40), but well done to every House, baker and buyer - this is a tremendous achievement. One of the biggest hits was Jemima Park's (Athelstane) choc chip cookies, and she shared her beloved recipe with us! 

 

Famous Choc-Chip Cookies

Jemima Park, Year 12, Ridgeway Campus

 

Ingredients

  • 115g Salted Butter

  • ¾ Cup Brown Sugar (packed) 
  • ½ Cup Caster Sugar 
  • 1 Egg
  • 1tsp Vanilla Extract 
  • 1 1/3 Cup All-Purpose Flour 
  • ½ tsp Baking Soda
  • 1 Cup Milk Chocolate Chips 

     

Instructions :

  1. Preheat oven to 180 degrees 
  2. In a large bowl, mix melted butter and sugars. Add egg and vanilla extract. Mix until smooth and well combined. To the same bowl add flour and baking soda. Mix until just combined - do NOT over mix. Fold in chocolate chips 
  3. Place glad wrap over bowl and refrigerate for at least 30 mins (the longer the better) 
  4. When ready to bake, take dough out and scoop into balls and place on a baking sheet lined with parchment paper
  5. Bake for 9-11 minutes until golden brown. Remove from oven and set down to cool - It is fine if they are a bit undercooked, they will continue to bake as they cool! 

     

Hot tips for the perfect cookie:

  • Chill cookie dough before baking 
  • You can freeze them to bake whenever! 
  • Let them cool completely before serving 
  • Don’t over mix dough
  • Baking soda, not baking powder 
  • Top with flakey sea salt for a perfect bit of balance!
