Looking for a delicious cheesecake recipe for Christmas? Please look below for one of my favourites.

What a wonderful and busy end to the year we’ve had at Playgroup! Over the past fortnight the children have enjoyed lots of festive fun, especially with our Christmas crafts. 

 

The children worked beautifully together to create one very long magnetic connectors snake - then had a great time cutting it up with wooden knives.

 

We wrapped up the year with our Christmas party on the final day of Playgroup. It was so lovely to see everyone together, sharing food, laughter and festive cheer.

 

As we finish up for the year, we hope everyone has a joyful Christmas surrounded by family and friends, and a very restful, refreshing break.

 

Please note that Playgroup will be held on Thursday mornings next year. We look forward to welcoming everyone back!

Raspberry Swirl White Chocolate Cheesecake Slice

Ingredients

Base:

1¼ cups shortbread biscuit crumbs

80g butter, melted

Filling:

500g PHILADELPHIA Original Cream Cheese Block, softened

¾ cup caster sugar

1 tsp finely grated lemon rind

2 tsp gelatine, dissolved in ¼ cup boiling water

360g CADBURY Baking White Chocolate, melted and cooled slightly

1 cup thickened cream, softly whipped

125g fresh or frozen raspberries

Sauce:

125g fresh or frozen raspberries, extra

1½ tbsp pure icing sugar

 

Method

  1. Combine the biscuit crumbs and butter, then press into the base of a greased and paper lined 28cm x 18cm slice pan (ensure the paper extends 5cm above the top of the pan). Chill.

  2. Beat PHILADELPHIA, sugar and rind with an electric mixer until just smooth. Add the gelatine and melted CADBURY Baking White Chocolate, mix until combined then fold through the whipped cream. Gently fold in the raspberries. Pour the mixture over the prepared base. Chill for 2 hours or until set.

  3. For the sauce, combine the extra raspberries and icing sugar in a food processor and process until smooth. Swirl the sauce over the top of the slice and refrigerate to set.
