YEAR 9 MARNONG ESTATE INCURSION

On Tuesday the 1st of July, we were lucky enough to have Executive Chef Greg Feck from Marnong Estate come and do a cooking demonstration experience with 9A, B, C, and D. Chef Greg ran 2 hour sessions, where he worked students through his menu 'It's all about the bird.' Chef Greg showed students how to break down a chicken, then use the frame to create a fragrant broth with aromatic herbs and spices. He then used that broth to create a chicken risotto with leek and corn, roasted breast meat and porcini powder. His final dish was a slow cooked chicken thigh with Ditalini pasta and mini stracciatella in the style of chicken cacciatore. Students got to taste both the risotto and pasta dish, with many students commenting on how delicious the food was. Some even said 'this is the first time I have had food better than my mum!' Chef Greg talked about cooking methods and ingredients, teaching students how to make the dishes he was creating.
After the cooking and eating was done, Greg talked about his career as a chef and how he came to be an executive chef. We learnt that Chef Greg worked with Jamie Oliver, Stephanie Alexander and many other high-profile chefs all over the world. Our students asked fantastic questions about careers and what it takes to become a chef. Chef Greg also talked about all of the career's opportunities available at places like Marnong Estate, for ay students interested in working in food or hospitality.
We were so impressed at how well our students engaged with the incursion, and express our sincere gratitude to Marnong Estate and Chef Greg and Soon along with Dani- their social media manager.
We are so grateful to have such a wonderful and supportive community surrounding Mickleham Secondary College and are excited by the future opportunities community partnerships like this can offer for our students.
