Over the past fortnight we have been busy preparing some sweet and savoury treats for our Mothers Day Afternoon Tea. When brainstorming what we could make, the children took into account the dietary needs of their Mums, some being gluten intolerant. So we got busy researching gluten free recipes and so far we've had a go at zucchini slice bites. Ebony may have taste tested one for quality control and she can confirm they were delicious!! We have also made a batch of choc chip cookies which we've rolled into balls and frozen the dough, ready to bake fresh next Friday! Thanks to Gen for her famous recipe.

Gluten Free Zucchini Slice
Ingredients
- 2 tsp extra virgin olive oil, plus 60ml (1 ⁄4 cup) extra
- 150g smoked gluten-free bacon, finely chopped
- 1 brown onion, finely chopped
- 5 Free Range Eggs (from our chooks!)
- 100g (2⁄3 cup) gluten-free self-raising flour
- 1 tsp gluten-free baking powder
- 2 (about 380g) zucchini, coarsely grated, excess moisture squeezed
- 80g gluten-free cheddar, coarsely grated
Instructions
- Preheat oven to 200C/180C fan forced. Grease and line a 20 x 30cm slice pan with baking paper. We used mini muffin tins to create bite sized portions!
- Heat the 2 tsp extra virgin olive oil, plus 60ml (1 ⁄4 cup) extra in a small frying pan over high heat.
- Add the 150g smoked gluten-free bacon, finely chopped and 1 brown onion, finely chopped and cook, stirring often, for 7 minutes or until bacon is crisp and onion is soft. Set aside to cool slightly.
- Use a fork to whisk the 5 Eggs in a large bowl until combined.
- Add the 100g (2⁄3 cup) gluten-free self-raising flour and 1 tsp gluten-free baking powder and mix until smooth.
- Add the 2 (about 380g) zucchini, coarsely grated, excess moisture squeezed, 80g gluten-free cheddar, coarsely grated, bacon mixture and extra oil. Stir to combine. Pour the mixture into the prepared pan and bake for 30 minutes or slice is golden and set.
Tip: if buying pre-grated cheese, always make sure it is a gluten-free alternative. It is best to grate your own.
