Engaging with Place

We have been very fortunate to have an abundance of apricots on our tree at the farm, so this week we decided that we would use up some of the apricots and make a cake. Here is the “Easy Apricot Cake Recipe” that we used to bake a delicious cake. We hope you enjoy it as much as we did.

Easy Apricot Cake

Ingredients

1 kilo of fresh apricots

1 tbsp lemon juice

½ cup of butter  (room temperature)

¾ cup of sugar

1 tsp vanilla extract

4 large eggs

2 cups of all purpose flour

3 tsp baking powder

¼ tsp salt

1 tsp cinnamon

2 tbsp powdered sugar

Method

  1. Preheat oven 180 degrees
  2. Grease the bottom and sides of a 9 inch springform pan.
  3. Using a food processor puree half of the apricots with lemon juice.
  4. Quarter remaining apricots and set aside.
  5. In a bowl cream butter and sugar together until light and fluffy.
  6. Add eggs one at a time and vanilla extract.
  7. In another bowl mix flour, cinnamon and baking powder and add to the mixture until combined.
  8. Add pureed apricots and mix.
  9. Place batter mix into the springform pan.
  10. Cook for 45 - 55 minutes.
  11. Let cool then dust with icing sugar.

For the children that have allergies or vegan, baked apricots were given as a substitute with a little sugar sprinkled on them and baked until soft, the sugar melted and golden brown in color.
