Fabulous Foodies Club 

We welcomed lots of new members this week. Everyone had lots of great ideas for future activities. 

Some Foodie suggestions for yummy treats (not so healthy)

ANZAC biscuits 

The Anzac biscuit is a sweet biscuit, popular in Australia and New Zealand, made using rolled oats, flour, sugar, butter (or margarine), golden syrup, baking soda, boiling water, and (optionally) desiccated coconut. Anzac biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I.

 A healthy treat for after school - Rishika M 

FROZEN YOGHURT ICYPOLES 

 

Ingredients

 • 1 cup caster sugar 

• 1 cup water 

• 1 lemon, zested and peeled with a vegetable peeler 

• 500 ml Greek-style yoghurt 

• 250 g frozen mixed berries 

 

Makes approximately 10 x 125 ml icy poles, depending on the size of the moulds. 

Freezing time 5 hours 

 

Instructions 

Mix together the sugar, water and lemon zest in a saucepan over a medium heat, stirring until all the sugar has dissolved, bring to the boil and then simmer for 2 minutes. Remove the saucepan from the heat and allow to cool to room temperature. 

Take the lemon zest out of the syrup and stir the syrup into the yoghurt. 

 

Chop the frozen berries and gently fold into the yoghurt mixture, fill your moulds quickly with the mix and place into the freezer for about 1 hour. Insert icy pole sticks into the center of each mould and freeze until solid for 4 hours or overnight. 

 

Tips for Healthier Eating 

Don’t be excessive with use of fats and oils. Use honey instead of sugar.  Swap to oat milk or almond milk for an alternative to cows’ milk.

Digital Ambassadors, Student Leaders meet with Project Rockit 

A group of our Digital Ambassadors and some of our Senior Student leaders met with Daniel from Project Rockit to discuss ideas around a new national consultative body of students that Project Rockit is forming. Daniel was so impressed with the work our students have been doing, such as their Vermont Values Online workshop, they have been invited to present the workshop to the Project Rockit staff later in the year. 

 

On Friday the 16th of February, the Digital Ambassadors hosted a meeting with Daniel (the Creative Director of Project Rockit) to introduce VSC’s Digital Ambassadors program and the brilliant work they have done. We discussed how we uphold the Vermont Values online in order to keep the digital community safe and the various methods we have used to implement our values digitally.

Last week, we had the pleasure of meeting Daniel from the Project Rockit team. Our discussions centered around strategies aimed at enhancing online safety for students at Vermont Secondary School, both within and outside of school settings. Furthermore, we explored opportunities for us, Digital Ambassadors, to collaborate with the Project Rockit team.
