Butter Chicken Recipe (4 large servings) 

Ingredients 
Mixed root vegetables*, cut into small cubes400g
Oil 25ml
Diced onion1 large brown
Minced garlic3 cloves or 20g
Minced ginger20g
Chicken stock powder (or 1 cup homemade stock)10g
Butter chicken paste (store-bought works well) 40g
Tomato paste50g
Diced chicken450g
Coconut milk200ml
Diced tomatoes (fresh or canned)200g

Method

  1. Roast chicken (whole and then dice after cooking) and root vegetables on separate trays.
  2. Put the pot over medium heat and add the oil.
  3. Add the onion and cook until translucent. 
  4. Add the garlic, ginger, stock powder, curry paste, and tomato paste and cook for a few minutes until fragrant.
  5. Add chicken and cook on high heat, stirring for 10 minutes. 
  6. Add the root vegetables and cook for a few minutes.
  7. Add the coconut milk and tomatoes and stir to combine. Simmer for approximately 10 minutes or until vegetables are tender.

Serve with rice.
