Butter Chicken Recipe (4 large servings)

Mixed root vegetables*, cut into small cubes | 400g |
Oil | 25ml |
Diced onion | 1 large brown |
Minced garlic | 3 cloves or 20g |
Minced ginger | 20g |
Chicken stock powder (or 1 cup homemade stock) | 10g |
Butter chicken paste (store-bought works well) | 40g |
Tomato paste | 50g |
Diced chicken | 450g |
Coconut milk | 200ml |
Diced tomatoes (fresh or canned) | 200g |
Method
Serve with rice.
