Green Pesto Minestrone

Ingredients 

2 tbsp olive oil 

1 medium onion, finely chopped 

1 celery sticks, finely chopped 

1l vegetable stock 

1 medium lemons, zested and juiced 

150g orzo 

120g frozen peas  and 175g frozen spinach 

50g pesto 

60g parmesan (to garnish)

Method 

Step 1 

Heat the oil in a large saucepan, add the onion, celery and a pinch of salt, and fry for 8 mins until soft. 

Step 2

Add the stock with the zest and juice of the lemons. Then add the peas and spinach, and cook for a further 5 mins. Blend with stick blender – this is optional.

Step 3

Stir in the orzo and cook for 5 mins. Swirl though the pesto and season.
