In Cooking this week Grade P/1  cooked Tomato Sugo with Greens and Potato Gnocchi.  We made both dishes GF and Fat free.

 

We used  Silverbeet, Green Onions, Garlic, Chives and Garlic Chives, oregano and parsley from the garden and local Desiree potatoes. We also used frozen Tomato Passata , Tomato and Greens Sugo and frozen tomato sauce, we made with the summer harvest and froze to use later.

 

Marcus’s  group prepared all the ingredients for the Tomato Sugo.  They trimmed and cut the  silverbeet and green onions and and chopped the garlic, parsley and oregano very finely.  They then cooked the onions, garlic and then added the tomato passata and sauces.  Students took turns to stir the sauce until it was boiling.  They checked and stirred it often as it cooked.

 

Chris’s group prepared the mixture for the Potato Gnocchi.  First they took the skin off the potatoes that had been baked and cooled before class. They then took turns using the Potato Ricer to make the potatoes into a fine mash.  It was quite hard to push the potatoes through the Potato Ricer so some students came up with different ways to make it easier, including chopping and mashing the potatoes first. We grated the potatoes too which worked quite well to make very fine potato mash. Students then whisked eggs and measured out the flour for the gnocchi mixture and combined all the gnocchi ingredients in a large bowl.  Ella, Marlin, Odette, and Matilda worked together to make the Gluten Free Gnocchi with fine rice flour and tapioca flour.

After recess, Darron and Grade 2 students joined P/1 to make the gnocchi.  Everyone did a great job carefully rolling out the potato dough, cutting it into small even pieces and using a fork to form the traditional gnocchi shape.  It was a fun activity and at the end we had plates of great looking potato gnocchi ready for cooking.

We cooked the gnocchi in boiling water, Kendre, Piper and her group watched the pots until the gnocchi floated to the to,  then they were ready. We cooked the Gluten Free Gnocchi in a separate pot.  While the gnocchi was cooking, everyone cleaned up and set the table. Owen’s group collected some flowers from the garden to decorate the tables.

Everyone tried the Potato Gnocchi with Tomato and Greens Sugo and enjoyed it so much there was not any leftovers! 

Kendre said, “Thanks for letting us make it, it was terrific.  Odette said the Gluten Free Gnocchi was really yummy. Owen said “It was the best dish all year! I loved the gnocchi because it was really soft and it tasted delicious.
