Egg-Free Banana muffins

Ingredients

Makes:  12

  • 2 Large Bananas mashed
  • 125 grams Melted butter (salted is ok)
  • 1/2 Cup Milk (any milk)
  • 1 Teaspoon vanilla essence
  • 1/2 Cup Sugar (I prefer brown)
  • 1 & 1/2 Cups plain self-raising flour

Method

  1. Preheat oven to about 180 degrees. Make sure you have mashed the bananas and mix well with melted butter
  2. Add milk and vanilla to butter and bananas, mix well.
  3. Add sugar, mix in.
  4. Add flour, mix until all combined (If you are feeling a bit indulgent 1/4 cup of chocolate chips added here is a nice treat but totally optional!)
  5. Spoon into muffin tray about half full, I prefer mini muffins so it will yield close to 24 mini muffins.
  6. Bake for 15 to 18 minutes for large muffins or 10 to 12 for mini muffins, or until raised and slightly golden, remember with no egg they will not raise quite as much. If they need an extra couple of minutes just keep an eye on them
