Engaging with Place

With strawberry season just around the corner we decided to make a delicious and easy strawberry ice cream for everyone to enjoy. We had to purchase the strawberries as we had nowhere near enough growing at the farm for this recipe. We hope you enjoy this recipe as much as the children enjoyed it.

Please note: for the children that are vegan, lactose intolerant or allergies we made a very easy sorbet recipe for them to try.

Easy No Churn Ice-Cream

Ingredients

 

1kg of ripe strawberries ( mango or raspberries can be used as an alternative )

1 tbsp of white sugar

1 tsp of vanilla essence

1 can of sweetened condensed milk 

500ml of cream ( full fat cream for whipping )

 

Method

  1. Preheat oven to 140 degrees  
  2. Hull and cut the strawberries in half and lay them out on a baking tray.
  3. Sprinkle sugar over the strawberries and toss through the strawberries.
  4. Roast strawberries for 45 minutes, rotating the tray halfway through the cooking time.
  5. Remove the tray from the oven and toss the strawberries, roast for a further 15 minutes making sure the juices do not become caramelized and stick to the tray.
  6. When cooked, remove from the oven and scrape into a food processor making sure you get all of the juices from the tray.
  7. Blitz until smooth, place mixture into a bowl and let cool completely.
  8. When mixture is cooled add condensed milk  and vanilla and beat with hand mixer for 1 ½ minutes on high until mixture is light and fluffy.
  9.  Place crean into another bowl and beat for 3 mins on high until stiff peaks appear.
  10.  Add a dollop of cream to the strawberry mixture and gently fold through once cream is mixed through add another dollop of cream and repeat the process until all of the cream is mixed through.
  11. Pour mixture into a freezer proof container and smooth out the top with a spoon.
  12. Freeze until frozen.
  13. Serve this delicious treat in a cone or in a bowl with fresh fruit.

 

 

 

2 Ingredient Strawberry Sorbet       

        

Ingredients

 

2 cups of frozen strawberries

1-2 tablespoons of maple syrup ( depending on taste )

 

 

Method

  1. Blend frozen strawberries and 1 tablespoon maple syrup in a blender until smooth ( add more maple syrup if you want it sweeter ).
  2. Enjoy straightaway or transfer to a lined freezer safe container smooth over with a spoon.
  3. Freeze for 1 -2 hours.

Please note: ⅓ cup of chilled coconut cream can be added to make the sorbet a more creamy strawberry type ice cream.

 

It is just as delicious as ice cream!
