Year 10 Food for You
Students have been learning about food science and how to apply their knowledge to healthy recipes. Students learned about dextrinization in bread making - this is when the starch in the flour is exposed to dry heat and is broken down into dextrin, resulting in a change in colour to golden brown. The Maillard reaction assists in colour development of baked products. It occurs when starch from the flour, and/or the sugar and the protein from the eggs are exposed to heat in the oven and creates a golden-brown colour. Coagulation is the permanent change to the physical and chemical structure of protein. The texture of the egg protein is changed from a liquid into a thick mass as a result of heat or the addition of acids. The white of the egg cooks first and sets or coagulates. The students completed an 'Eat Good, Feel Good' assessment. The students looked at take-out food and how to make a healthier version. The Australian Guide to Healthy Eating had to be analysed and considered for their healthy recipe. Students worked in pairs and researched ethical and sustainable ways of food production. The students researched their own recipe, produced and evaluated their food. The students made a recipe card of the recipe that they have cooked.
Our hub accepts BSC uniform in good condition. Please drop anything you have to the Admin office or our hub. Thanks very much.
