Banana Cake

Ingredients

60g Butter or Margarine

90g Caster Sugar

1 egg

2x Bananas, mashed

1/4 teaspoon Bicarbonate of Soda

2 tablespoons Warm Milk

1 Cup Self-Raising Flour

Method

1. Cream butter and sugar, until light and fluffy, add egg, mashed bananas and Bicarbonate of soda. Mix well.
2.  Gradually fold in milk and flour alternately.
3. Pour mixture into a well-greased loaf tin and cook in a moderate oven for 30 minutes.
4. Serve sliced or, if desired, ice with lemon-butter icing.
