In Cooking this week Grade 456H  cooked Eggplant Parmigiana, Rosemary Focaccia and Stuffed Pugliese Focaccia.

 

As it was 456H last cooking lesson for the year we used  ingredients we froze and preserved during the year, including eggplant, tomato passata, ricotta and olives. It was great to be able to use the great eggplants and tomato passata we froze at the end of summer.  We also used  Silverbeet, Green Onions, Garlic, Chives and parsley, rosemary and oregano from the garden. 

 

Julie’s group prepared the dough for the 2 focaccias. Romy, Arlo and their team mixed the ingredients and kneaded the dough, while Merry and her group prepared the toppings and stuffing for the focaccias. After the dough proved they worked in two groups to make the 2 different focaccias. 

They made the Stuffed Puglia Focaccia with herbs, greens and mozzarella and added oil, rosemary and salt to the Rosemary Focaccia.

 

Minna, Pepper, Lizzie, Otto and their group chopped the herbs, garlic and prepared the greens for the Tomato Sugo for the Eggplant Parmigiana.  James prepared and chopped the onions.  Elsie and her group cooked the onion and garlic and added all the ingredients for the Tomato Sugo as they were prepared.   The group then worked together to grate the 4 cheeses we used, including the ricotta that we made and froze in a previous class.

We had to separate and dry the frozen baked eggplant pieces before layering the Eggplant Parmigiana.  

As we cooked Javi did an amazing job clearing, rinsing and washing all the dishes. His great work made our clean-up at the end so easy!

 

As the Focaccias and Eggplant Parmigiana cooked, we cleaned up and set the tables. 

Merry and her group prepared the olives from Sue that we brined in May.  They used the olive pipper to remove the pips and prepared the herbs and garlic.  

 

Everyone enjoyed the Eggplant Parmigiana, Rosemary Focaccia and Stuffed Puglia Focaccia. Everyone who likes olives, tried them and said they were delicious.
