HOW DOES YOUR GARDEN GROW?
A team of keen gardeners from F-2 joined us last week for some weeding, plant maintenance and - most importantly - taste testing! Our most successful crop this winter has been our beautiful radishes. These seeds were planted at the end of term 1 and we were delighted to find many radishes ready to pull up. It was interesting to discover how this plant grows below the ground but seems to pop up to the surface to let us know they are ready to eat!
We cleaned the radishes and sliced them, and lots of brave students gave them a try. Students described the taste as: bitter, spicy, fresh, yum, a bit like a carrot, and even...yuk! We had lots of ideas how we could use the radishes in different dishes - Stef told us she like them in burgers, some of us enjoy them fresh in salads, in coleslaw, with smoked salt, and others like them pickled. Here is a simple pickling recipe:
Simple Yummy Pickled Radishes
150mls rice vinegar
½ cup water
3 tbsp sugar
1 tsp salt
I bunch of radishes - washed, trimmed and thinly sliced
4 large red chillies sliced in thin rounds
Add the vinegar, water, sugar and salt in small saucepan and bring to simmer, stirring to dissolve sugar.
Set aside to cool for 5 mins.
Pack the radishes and chillies into a jar, pour over the liquid, push it all down then seal and store in fridge.
Ready to eat in 1 hour, or even better after a day or two!
