SAKG Program

 

PUMPKIN MAC AND CHEESE

Ingredients

2 tablespoons of olive oil

500 grams of pumpkin (peeled and cut into 2cm chunks)

1/4 teaspoon of nutmeg

30 grams of butter

1 brown onion

3 sprigs of thyme

500 grams of macaroni or penne

1.25 litres of vegetable of stock

3 cups of grated tasty cheese

1 cups of parmesan cheese

Salt and pepper

 

Method

Peel and chop the pumpkin into 2 cm chunks. Finely chop the onion.

 

Measure out the nutmeg and place in a small dish.

 

Weigh the butter and place in a small dish.

Remove the leaves off the thyme sprig.

 

Measure the vegetable stock into a jug. (it can be from a premixed carton, homemade or a stock cube, or just use water.)

 

Measure the cheese.

 

Place a large heavy based saucepan on a medium heat. Add 1 tablespoon of olive oil with the pumpkin and a pinch of salt and a tablespoon of water. Cover and cook for 5-6 minutes, or until the pumpkin is soft. Add the nutmeg and stir with a wooden spoon to break up the pumpkin. Remove from the saucepan and put aside.

 

In the same saucepan on a medium heat add another tablespoon of olive oil the butter, onion and thyme, cook stirring for 5 minutes. Add the pasta and stock, stir and bring to the boil. Reduce heat and bring to a simmer. Cover and cook for 6-8 minutes or until the pasta is tender and most of the stock is absorbed.

 

Turn the heat down to low add the pumpkin and cheeses and stir to combine. Season with salt and pepper.

Help with our Chooks - please!

We are desperately needing volunteers for looking after our chooks in the SAKG.

 

The chooks have very simple needs - checking food & water and locking away after school.

 

It's simple fun and can be done at drop off & pick up.
