While we usually associate winter with being cold and slow in the garden, this winter our Patch is producing an abundance of wonderful winter produce.
We have returned from the school holidays to garden beds full of winter greens, celery, beetroot, broccoli, cauliflowers and loads of citrus fruits on our trees. The students are now seeing the results of their efforts from earlier in the year and can enjoy them in the kitchen.
To celebrate our winter harvests, Years 5 and 6 are preparing and sharing winter veggie tarts, and serving them back with rocket, radish and orange salad and orange and poppyseed muffins.
Years 3 and 4 are enjoying warm beetroot and herb salad served with orange and rosemary focaccia and orange and poppyseed muffins. We have been talking about “Root to Tip” cooking and the variety of different vegetables that can be eaten from top to bottom.
The students were able to see our freshly harvested beetroot still displaying their fine roots below the bulb right up to the leafy tops which we used in our salad. The highlight for this week was being able to watch some students try fresh beetroot for the very first time!
