The Hunter Community Garden
Three garden beds have been planted with waxy corns, one garden bed with Vietnamese mints and lemongrass. Waxy corn is popular in South-East Asia.
There are many interesting recipes using waxy corn, such as grilled corn cobs with fried shallot oil, stir-fried corn kernels with butter and spring onions, stuffed chicken with corn, corn pancakes and sweet corn dessert.
Craft Projects – Please bring your Christmas craft projects to share on Wednesday afternoons from 2pm to 3:30pm in the Early Learning Centre.
Recipe: Vietnamese Stir Fried Corn
Use 3 medium or 2 large corn cobs. If the fresh waxy corn is not available, use frozen corn kernels instead (waxy corn is available in most Asian grocery stores)
Ingredients
- 1 or 2 tablespoons butter
- 2 cups fresh corn kernels
- 1 chopped fresh chili (optional)
- 2 ½ teaspoons fish sauce, or 1 ½ teaspoons chicken powder
- ¼ teaspoon salt
- ¼ teaspoon smoked paprika to get the colour
- 1 stalk of spring onion (thinly sliced)
- Toasted seaweed crumbled or roasted sesame
Instructions
- Cut the whole corn cob into whole kernels.
- Melt the butter in a large skillet/wok over medium-high heat.
- Add the corn and chilli and cook for about 2 minutes.
- Add the fish sauce and stir frequently for 2 to 3 minutes more, until the corn has fully cooked.
- Remove the wok from the heat and stir in the green onion
- Transfer to a bowl to cool the corn down for a few minutes.
- Top with seaweed crumble/sesame and serve straight away.
