Passionfruit Slice 

 

1 C SR flour

1 C desiccated coconut

½ C Sugar 

125gm melted butter or margarine

1 tin condensed milk

½ tin passionfruit pulp

Juice of 1 lemon

 

  1. Preheat oven and line slice tin with paper
  2. Combine melted butter, flour, sugar and coconut in mixing bowl, stir
  3. Press into slice tin and cook for 10 minutes
  4. Allow to cool
  5. Combine condensed milk, lemon juice and passionfruit into another bowl
  6. Pour this over the cooled base and cook for another 10 minutes

Peppermint Crisp Slice

 

250gm sweet biscuits such as teddybear, marie , morning coffee or arrowroot

1 tin condensed milk

4 peppermint crisp bars

200gm milk chocolate

 

1.In a blender or food processor or manually by wrapping biscuits in tea towel and whack with rolling pin, can add peppermint crisp at this stage, and blitz together

Note* if you want some peppermint crisp for decoration- smash separately and put aside

2. Place blitzed biscuits and peppermint crisp in mixing bowl, add condensed milk and mix well

3. press into lined slice tin and refrigerate

4. melt chocolate and pour over the top of the slice and allow to set 

 

 

Singapore Noodles (Easy) – Serves 2

 

1 packet 2 minute noodles any flavour 

¼ onion, sliced or 3 spring onions

1/4 capsicum, sliced (use any colour)

¼ C green beans (frozen or fresh)

½ can baby corns

100gm bean shoots

2tsp curry powder or curry paste 

2 tbsp soy sauce

2 fried eggs

 

  1. Soak noodles
  2. In frypan sauté onion, capsicum and curry powder
  3. Drain and add noodles, baby corn and beans and finally add soy sauce
  4. Fry up eggs to your desired texture- soft yolk or hard
  5. Arrange noodles and vegetables in bowl and serve with fried egg on top
  6. Can add cooked chicken, prawns or bacon to make a main dish
  7. Can serve with slice chilli
