Canteen

Hi everyone
I hope you all had a peaceful school holiday break and managed to keep busy. My family spent the time bike riding, playing cricket and catching up on jobs which we never seem to have time to do (think - cleaning out kitchen cupboards.....)
Obviously, this term will be a very different one for all of us. I'm sure it will be challenging for everyone at some points, but I'm sure there are going to be many positives as well.
I've been enjoying having time to spend making healthy meals for my family rather than throwing together the first thing I see in the fridge. I think the kids have appreciated it as well!
Over the course of the time that will be spent away from RHPS, I will be sharing tips, tricks and some easy, healthy recipes - some that the kids will be able to make themselves (or with a little help). So...let's get to it!
Banana and Berry Pancakes
1/2 ripe banana
1 egg
2 tablespoons self-raising flour
1 teaspoon white vinegar
1/2 cup frozen berries
olive oil spray
Mash banana until smooth, add whisked egg then flour and vinegar. (If you don't have vinegar, just leave the mixture to stand for 10 mins)
Lightly spray a non-stick pan with olive oil spray and heat over medium heat. Pour mixture into pan and sprinkle frozen berries over top. Cook for 5 minutes or until bottom is golden brown. Carefully flip and cook until golden and cooked through.
Serves - 1 large or 2 small pancakes
