Eighteen months ago, thanks to the fine workmanship of Marc, Michael and Vince, the Food Technology Edible Garden was built. Establishing this environmentally friendly resource enabled the introduction of the ‘paddock to plate' concept … or in our case … ‘carpark to plate’, where students pick fresh produce and use it in the meals they produce.
Crops including zucchini, spinach, tomatoes, celery, lemongrass, radishes, spring onions, basil, sage, rosemary, thyme, oregano and mint have come and gone. All plant material waste from Food Technology classes is added to a compost tumbler and in time, returned to the soil of the Edible Garden.
It has been a great season for cherry tomatoes, so classes have used them in Pita Bread Pizzas, Smashed Avocado with Poached Eggs and Homemade Gnocchi with Baked Tomatoes. Year 11 students even grabbed handfuls of freshly picked tomatoes and enjoyed them as a simple, nutritious snack!
The Edible Garden was also utilised by Year 8s who picked herbs of their choice to mix through pizza sauce, Year 9s picked thyme for their Cottage Pies and Year 10s picked sage for their Homemade Gnocchi.
