A yummy winter meal – please read on!
We have had a lovely fortnight at Playgroup. Even with all the illness out there, we have still had families managing to come along for a play.
There is often solo play, but then the kids gather and play alongside each other, or with each other – it is really nice to see.
Here is a recipe for a meal I made my family last week. It was a huge hit, so I thought I would share. The recipe and link are below.
French Onion Chicken

Ingredients
- 1 kg chicken thighs halved
- 6 bacon rashers diced
- 1 onion diced
- 45 g French onion instant soup
- 2 tbs plain flour
- 2 tbs oil
- 2 tbs butter
- 4 tbs extra-light sour cream
- 1 tsp parsley *to serve
Method
- In a plastic bag, shake the chicken pieces in the flour and French onion soup.
- In a large casserole dish that can be used in the oven, heat the oil and the butter.
- Seal the chicken pieces quickly and then place in a bowl.
- Once all chicken is sealed and removed from the dish, cook the bacon and the onion.
- Remove the pot from the heat.
- In a jug, put the remaining flour mixture from the plastic bag. Mix in 1½ cups water.
- Return the chicken to the casserole dish and pour over water. Stir through.
- Cook in a moderate oven for one hour, stirring once.
- Remove from oven and stir through sour cream and parsley. Serve with rice, or mashed potato and vegetables.
Notes
Sometimes I increase the liquid volume and add potato and carrots and serve with crusty bread.
