A yummy winter meal – please read on!

 

We have had a lovely fortnight at Playgroup. Even with all the illness out there, we have still had families managing to come along for a play.

 

There is often solo play, but then the kids gather and play alongside each other, or with each other – it is really nice to see.

 

Here is a recipe for a meal I made my family last week. It was a huge hit, so I thought I would share. The recipe and link are below. 

 

French Onion Chicken

Ingredients

  • 1 kg chicken thighs halved
  • 6 bacon rashers diced
  • 1 onion diced
  • 45 g French onion instant soup
  • 2 tbs plain flour
  • 2 tbs oil
  • 2 tbs butter
  • 4 tbs extra-light sour cream
  • 1 tsp parsley *to serve

Method

  1. In a plastic bag, shake the chicken pieces in the flour and French onion soup.
  2. In a large casserole dish that can be used in the oven, heat the oil and the butter.
  3. Seal the chicken pieces quickly and then place in a bowl.
  4. Once all chicken is sealed and removed from the dish, cook the bacon and the onion.
  5. Remove the pot from the heat.
  6. In a jug, put the remaining flour mixture from the plastic bag. Mix in 1½ cups water.
  7. Return the chicken to the casserole dish and pour over water. Stir through.
  8. Cook in a moderate oven for one hour, stirring once.
  9. Remove from oven and stir through sour cream and parsley. Serve with rice, or mashed potato and vegetables.

Notes

Sometimes I increase the liquid volume and add potato and carrots and serve with crusty bread.
